Hi @Martin Furst and welcome to Jira.   Every ticket you create in Jira is an "issue".  A "story" is a type of issue.  Jira comes with shipped with several default issue types.  An admin can create more issue types.   Issue types are mapped to an issue type scheme, and then the scheme is mapped to a project.  You can as few or as many types and schemes as you wish.  Here's another reference doc the breaks down issues in Jira -
