I would like to know if there is an automatic way to extract the time stamps of status switches in the workflow. I´m mean beyond these of start, end date and so on...
Background: I´m establishing a project and would like to analyze the efficacy of the work, identify the loops in the workflow and understand how these can be optimized.

You can use Jira Rest API's to pull this data from issue changelogs. Or You can create your own custom fields and apply Jira automation to populate those. Another option could be to use Jira Control Chart which helps visualize the average data for one issue or a cluster of issues via dots on the chart. Y

If you consider installing third-party add-ons, option for you can be Time In Status. You can get various real time reports with add-on. Іdentify the loops in the workflow in a few clicks. For this just:
2. Also the Assignee time report can be useful for you. This report will notify you of how much time each Assignee spent on each task.
3. Also you can see Time in States Metrics as a Dashboard Gadget. For an example how long a task was in progress on each Assignee or how long it was Unassigned. You also have a Table or Chart view for this.
4. For more in-dept analysing try out Pivot view table. We can evaluate how much the time in the In Progress status has changed depending on the number of tasks, and we can also “dive deeper” and see which tasks have spent a lot of time.

Yes, you can do by JQL search

It is also possible by Transition Count or Status Count Reports

You can do it by setting time ranges for the issues.

The required data is available in each issue's history but you will need to use a marketplace app to get ready-to-go reports. Good news that report is available in our application where you can directly learn the transition dates without having to deal with Jira issue histories. The app is Timepiece (formerly Time in Status) , the oldest and leading Time in Status app in Atlassian Marketplace, which is built by my team at OBSS. It is available for both Jira Cloud, and Data Center.
You can use the date-based reports to see the transition dates from/to a status. In the screenshot below you can see the transition dates of the issues to each status. I think this report will be spot on for your needs.

As you can see from the previous answers, this is an area where many Jira users rely on apps from the Atlassian Marketplace to fulfil their reporting needs.
If a Marketplace app is an option for you, I think you'll like the app that my team and I are working on, JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It also comes with a number of so-called history columns that aren’t natively available, including an issue's time in [status], or time between [status] and [status].
This is how it looks in action:
As you can see above, you can easily sort and filter by your history columns, and also use them across JXL's advanced features, such as support for (configurable) issue hierarchies, issue grouping by any issue field(s), sum-ups, or conditional formatting.
Of course, you can also export your data to XSLX (Excel, Google Sheets) or CSV in just two clicks.

I see that JXL has some interesting features. However, my impression is that there are other apps, that are better suited to pick up my needs.

You can try Status Time Reports app developed by our team. It mainly provides reports and gadgets based on how much time passed in each status.
Here is the online demo link, you can see it in action and try without installing the app. You can have a look at Time in Status for Each Issue , Time in Assignee reports. To get a report of status transition dates, you can have a look at Status Count And Entry Dates report. Entry date(see In Development, Ready for Testing, In Testing, In Development columns.) is status transition date and status count(see #In Development, #Ready for Testing, #In Testing, #In Development columns) is how many times an issue is entered to this status.
