Good day. We plan to use JSM and even launched a test 30 days. But now, not only administrators have access to the product, but also trusted users who do not plan to use this product.
If the problem of administrators is solved by removing the corresponding group from the access, then how to deprive this access of trusted users?

Yes, all access to projects are controlled by the Permission Scheme for that project.
For access to products, then that is controlled by groups. So you can remove the user from the Jira Service Desk Users group (and Customers group if you have that) and that should take out access to the product.
