There are options to switch but not remove project pages from projects ie. documents linked from Confluence under the Pages tab.
Is there a deletion or "disconnect" option? Or can you only switch to other pages once you have engaged the feature?
At this time, there appears to be no UX feature in Jira to remove a project page link, although you may connect to a different page. Here is a suggestion to at least allow resetting the links to empty: https://jira.atlassian.com/browse/JSWCLOUD-21185
I could not find any REST API endpoints to do this, although it appears Forge applications can interact with jiraProjectPages: https://developer.atlassian.com/cloud/jira/platform/using-the-project-page-module/#using-the-project-page-module

You can disable Project Pages feature Project Settings > Features.
But it seems there is no feature to remove existing connection: Enable and disable project pages
