I add a custom field type "Dropdown" the label I mentioned is priority and given "P1, P2, P3" as dropdown option for the same.
Is their anyway I can add this field as filter in Backlog and Board so using the same I can filter the tickets

You can look at quick filters on the board, only applicable if you are using a company managed project
Create a quick filter for each dropdown option, this could be a workaround for you
Team Managed projects also support "quick" filters but they call it "custom" filters there.

It is not currently possible to add fields as drop-down filters like the ones automatically created for Labels, Epics, and Types.
You would need to make separate and individual custom fields for each value that could be used in that field.
