The Done/Production column of our kanban boards in our project  is pulling in tickets based off of last ticket update date and not the date the ticket was moved to completed.

Hello @Vara Prasad 

The columns of boards show issues based on a mapping of issue Status values to the column. There is no direct correlation between changing dates in an issue and the column of the board in which the issue is displayed.

Can you provide an image of the issue details for an issue that is in the column that you think should not be in that column?

Can you provide an image of the board configuration settings that shows the mapping of issue Status values to columns?

I see. Your problem is not with the Status of the issue but rather with the fact that you are trying to hide older completed issues using the "Hide completed" feature.

There is an issue in Atlassian's backlog to change the "Hide completed" time frame application to consider only the Resolution Date. Currently it does consider the Updated Date. You can vote and comment on that backlog item here:
