Can we create EPIC for multiple projects in one single project or if I put it other way , We have 3 projects running, can we create 3 epics ( one for each project ) and track the same. Is this a good practice. Any other solution will be helpful?

You can create 3 Epics one per each project and you can track them by creating one Board with filter include the project(s) you like
another solution provided by John Funk Epic across multiple projects where you can create one epic and link it to issues across multiple projects.

Yes, Epics live in projects because they have to, they are, deep down, Jira issues and those have to be in a project. But it doesn't matter what projects they are in as long as the people who need to see them can see the project containing them.
Having one per projects is a perfectly good thing to do as long as it works for what you want to use the Epics for.
I can't tell you if there is an "other solution" as you have not defined what problem you are trying to solve.
