Jira cloud: how updates processed on the backend

Hi,

I'm using SQL connector app (by AlphaServ) to unload few Jira tables into local db, and can not figure out why I'm missing some fresh updates in main tables (let say Issues).

Issues is just a name used by this  app , but I imagine something similar should exist in native db.  Let say  I updated status = Done from  InProgress at 10am.  It's clearly confirmed  looking at the issue   in browser, even Jira doesn't record such changes under History tab.

Then  next day early morning 12:30am I unload whole table into my local db, and still see that issue with  old Status =InProgress.

Think those changes processed somehow differently than I expected, thru some history tables or  batches ??

Anybody can explain how it works ?
