I would like to change the issue type associated with a customer request type. I can delete the existing customer request type and create a new once, but it is a bit of a pain. Is there an easier way to do this?

Unfortunately no, there is no way to change the issue type associated with a JSD request. I am almost certain this has to do with all the possible underlying workflow elements associated with that issue type and which might not exist on an existing JSD request form. While building out the functionality within JSD is certainly possible, I'm sure Atlassian product management reviewed the cost/benefit and determined other backlog items were of more value. I agree it can be frustrating but I've found it to be tolerable. Knowing this makes me think twice when I create a request. :)
