Is it possible to disable email notifications for assigned subtasks under a particular issue type?
It's acceptable for the agent to receive an email notification for the assigned standard issue type, but then is bombarded with the corresponding assigned subtasks as well.
Is there a post function/automation set up I can utilize?

Unfortunately no, Notifications in Jira cannot be configured that granularly.
