If you define different field configurations, you can hide certain fields from certain issue types. However, if you don't add the field to the screen, it won't be visible either.
Can you explain the exact use case? What are you trying to accomplish?
We have created several custom fields where our tech can choose from drop downs/enter text/ check a box etc. We do not want it on all cards
