is ist possible, when i receive or creat a new ticket, that when i set the assigne to me or to another colleague, that the workflow status moves on automaticilly(which also would set the SLA to respond)??

Also would help, when i click as an agent on the "Assigne" button in the ticket, the status sets himself automatically "in Progress".
I haven't tried this specific scenario, but you should be able to use Update on Transition for JIRA and it's Transition issues (update issues) post function conditioned on your assignee value being specific values. You would use %original_assignee% substitution as the value to match and then construct a regex to do the matching.
