I'm trying to map specific statuses to 3 stages I have in my JPD project.
Each stage would have its own statuses.
I tried to edit the status workflow but couldn't make it work as I wish.
What's the best way to have those statuses?
Can I edit the status workflow according to my use case?
Or shall I create a new field with the list of all statuses (a-->h)?
Or something else :)?

I believe that should be possible with editing the Workflow of your project. Below I've configured one to what I believe you are asking with relation to the stages and statuses mentioned:
Within the workflow you'll notice I've added three transitions after Discovery is selected so the idea can be moved into either Stage 1, Stage 2 or Stage 3.
Then depending on what Stage is selected, the idea can then only be transitioned into the corresponding Statuses:
I've removed a number of the "Allow issues in any status to move to this one" options / transitions so the idea needs to follow the workflow defined:

I have one question when reading your reply.
I'm under the impression the stages are statuses, is it correct?
Do you use the "stages" as "statuses"?
With your solution is it possible to keep the stages so "status" is adding one level of information?
In my use I would like to have 1 stage for our roadmap items, one for an "idea pool" and one for the "feature request".
So we can manage those 3 stages with their dedicated statuses.

Could you give a little more context? What is a Stage, is that the Roadmap field, with options for Now, Next, Later etc.? Or something else? And then are you wanting to change the Stage field to a different value when the status changes from c to d or f to g (or in reverse)?
If so, you could do that by adding rules to those workflow transitions. So if stage is a separate field to the status flow, you can just drive the update of the Stage field through the workflow transition rule, like this:

Hello @Edouard Parison. I use "Sections" to create the Stages and then filter the view by the status that corresponds to that stage.
I think this might work for you too.
