At the moment we have for each Confluence, Jira, Crowd, Bitbucket and Bamboo an own server.
Now we want to migrate to the data center version with minimum effort. Which steps are necessary for this? Could we use the servers also with the data center licenses and just need to swap them? Or did we need new servers? Is it also necessary to move to AWS or Azure or could we stay at our lokal server provider?
We are happy with the setup at the moment so we don't need the data center features.
And is there a change to see where the plugins are used? Especially with Confluence?

Atlassian has recently changed the way you move between Server and Data Center : now it's as simple as chaning the application license key, nothing else is required. This means that :
The only change that will have an impact is for you plugins licenses : you will need to make sure they match you Jira/Confluence user tier and version, meaning that if you now have a Jira 500 user Data Center license, all your Jira plugins need to have a 500 users Data Center license too.

At the moment we have the unlimited community server licenses. And as I understood we could have the unlimited data center licenses. So we need for the plugins that we use an unlimited licenses?

if you're on community licenses, then it's pretty much the same as before : you will have access to free Atlassian products and marketplace apps. So nothing changes for you in this case, you'll only need to follow the same procedure to get your licenses.
