Does OpenJDK refer to https://openjdk.java.net ?
Is AdoptOpenJDK also supported?

According to the support platforms page OpenJDK 1.8 is the currently supported version in 3.3.x https://confluence.atlassian.com/crowd/supported-platforms-191851.html
If having support in Crowd for another JDK version is important to you, I'd recommend creating an issue in our public issue tracker for Crowd: https://jira.atlassian.com/projects/CWD/issues

Yes, AdoptOpenJDK 11 is a supported Java Version as mentioned here
You can test with the AdoptOpenJDK 11 in the test environment before deploying in the production.
