My manager has asked me to look for options on the various data elements captured from such systems/ softwares, and what could be the various ways the data can be read and provide insights, also how to analyze this data using BI apps like power BI/ Tableau

@SHIVAM KRISHANA Welcome to the Atlassian community

What are you specifically focusing on?  What questions are you trying to answer?  For instance, we have analyzed our KB to see what articles are the most used and which ones are never used.  We use this data then to prioritize which articles get updated first on new releases or to do follow-up and see if the KB is not helpful because of it's content or if people just do not use it.  

We also look at who is active in Confluence and Jira on project or operational teams.  We look at teams that are performing well to see what they are doing and how it is helping them perform well.  We can then use this to provide training to other teams. 

These are just a few of the things we do.
