Hi, how should I as a admin configure the dashboard so that we can see in one dashlet all newest edtis within out confluence. As default it has many different but specific update views and non with "all content"

As Marc mentioned, you found one of the differences between Cloud and DC. Here you could create and maintain a homepage as well as further customize by using macros like Popular Labels or Recently Updated.
Or, you could use third-party apps from the Marketplace to gather and display insights for your team. Here our team, bitvoodoo, developed Viewtracker - Analytics for Confluence which allows you to see all the metrics surrounding content: who, when, what and where. The only difference is that our app works via Reports rather than macros.

We would need to get a similar view as we had in the old installation where we could see ”all newest things that anyone had done within our confluence anywhere within it; comments, attachments, page edits

Confluence Cloud doesn't have a main dashboard as was the case in server/DC.
The main page is user based.
This can be changed to a default space, if you require this.
