My team would like the ability to all work in the same document at the same time. We can do this in Google Drive, but if Confluence has a similar capability then we have fewer places to store and track a working file.

That is a pretty common request to hit our Confluence collection. There are a few differences between what we call pages and documents. Pages are volatile and collaboration focused. Documents tend to be more fixed and slowly edited.
Confluence pages are created with an specific experience in mind. This experience prompted Atlassian to introduce Collaborative Editing way back, in Confluence 6.0.

For short, Confluence is not capable of editing documents. We can store them within the platform, but not edit them natively.
