I have tried looking for a complete list of all variables which can be used in document templates. I am only able to find them when editing existing templates. This cannot be the easiest way to do this?

Welcome to the community.
There is no such thing, as you are able to create your own variables as well. The ones in ootb templates can be used.
Here is a link to the documentation around variables, I hope this gives you some more insight.
That seems weird to me? There SHOULD be a list of variables which are being used by currently implemented templates. For example, if you add a new meeting notes from a template, it will fill out myself as attendee automatically.

These variables are set in blueprints. These blueprints are defined and made by Atlassian.
You could create your won blueprints, but the variables used, you can't place in your own made templates.

I'm not talking about the templates themselves (blueprints as you call them), but variables used in those documents.
An example is below:
You can see "currentDateLozenge" and "documentOwner". THese seem te be filled in automatically, but I cannot find any definition on the Confluence (cloud) documentation.
