When I am uploading a document to Confluence. The system is using the date of the day you are uploading.
But can you change that date into the date of the original date of the publication date from that document?

Non you cannot change the creation date of your attchment.
Here is the documentation on the attachment properties. You can change the Name, add labels, comments and change the storage page, but you cannot change the creation date.

If I understand correctly, you have a, for example, MS Word document that you created on November 1. You upload it to Confluence on December 1.
Confluence shows that the document was created on December 1. And you want to change it to November 1.
I'm afraid that's not possible (unless there's an app or a programmatic hack to do that).
What works for us is using a small table with the document history - especially for our intranet docs which often originate from non-Confluence resources. Date created, date modified, by whom, etc.
Sure, the dates that precede the document upload to Confluence are not available in Confluence analytics and content management tool but they do work on the document level.
