I have reviewed the documentation and notes and am unsure of the upgrade path I need to take Confluence Data Centre 7.13 all the way through to 8.5.
Is it a simple as upgrading from 7.13 to 7.19 then on to 8.5, or do I need to upgrade to other intermediate versions?

You can directly upgrade from confluence 7.13 to 8.5. No need of any intermediate versions.
I would suggest, try upgrading in test server and then in production.

Rilwan - Thanks so much for the reply. Is it the same taking JIRA Data Centre 8.2 to version 9.12 or do I need to go thru 9.4?

Referring to the upgrade checklist, I think there should be no problem for upgrading from 8.2 to 9.12
