Recently when creating new documents, every time I select a piece of text, to copy or edit a pop up for the writing assistant appears. This is deeply unhelpful as I have no interest in it, and it obscures the text I am working on. Any way to turn it off just for me, not the whole org ?

There's an option in your Personal Settings to specifically disable this pop up just for you. However, this option didn't work for me, and I found that this is a bug that's been reported here:
Looks like the bug ticket was previously closed, but had been moved back to "Gathering Impact" recently.
I'd suggest marking that bug as "This affects my team" to provide visibility and help them prioritize bugs. You could also "Watch" the bug ticket to get notified of any updates.
