Hi, I would like to know more about the Document Control for Confluence Cloud, how does this system work? Would it work for Quality Management System, like UniPoint?
For Confluence, document quality and lifecycle control are mostly implemented by using dedicated apps for this purpose.
Better Content Archiving for Confluence has been the go-to tool for Confluence content lifecycle management on Server and Data Center, and now it is coming to Confluence Cloud.

In our experience, users who set up a quality management system in Confluence Cloud use multiple addons.
These addons start from the free Keep it up to date! addon to solutions using Document Control.
When building such a system with Confluence Cloud, most users implement the system specific to their industry and the procedures they follow. Most users also use the built-in features of Confluence to limit read and write access to certain spaces of pages.

I agree with Levente. You will likely need third-party apps to implement Quality Control and Content Lifecycle Management.
