Once I've alphabetized a table how do I save it that way permanently?

You can use Table Filter macro's Default Sorting option, or just to sort it while editing the page.

Sadly, rebuild it manually.

You might have success copying the reordered table in view mode, putting the page in edit mode, deleting the table, adding a 1x1 cell table, and pasting.
