I've reviewed the details about granting us data access to your site on the Data Access Request FAQ.
This did not answer my question about how our data is handled, protected, and assurances it is not shared with others.
Related to "Data Access" and site access, required for Atlassian to help troubleshoot and fix problems as part of a support ticket, what is the official non-disclosure agreement in place when we allow the Atlassian team access to our data?

Atlassian support operates under the terms of our Software License Agreement documented in https://www.atlassian.com/legal/software-license-agreement
Specifically if you search that document for section 12. Confidentiality
That section will explain in detail that Atlassian does not share this data with any third parties. From that page:
Except as expressly authorized herein, the Receiving Party will (1) hold in confidence and not disclose any Confidential Information to third parties and (2) not use Confidential Information for any purpose other than fulfilling its obligations and exercising its rights under this Agreement. The Receiving Party may disclose Confidential Information to its employees, agents, contractors and other representatives having a legitimate need to know, provided that they are bound to confidentiality obligations no less protective of the Disclosing Party than this Section 12 and that the Receiving Party remains responsible for compliance by them with the terms of this Section 12.
I hope this helps to clarify. I will look to update that FAQ as well to help others that might have the same question.
