Hello,
Is it possible to allow access in Confluence without using 'confluence-users' group?
If no, how can give limited access (say to only one space) to external contractor visiting our site for a very limited time?
The setup now, is that all spaces have 'confluence-users' as their only group in the permission tab.

You can create another group, grant it "can use" and use that to grant access to the space the external users should see. Then make sure the account created for the external person is only in that new group.
You could also add them individually, but then they have to be part of a group that "can use" anyway, and you'll be fiddling around having to add/remove every time someone visits. I'd create a group called "guest" and leave that in place for re-use

Would these temporary users have to be included in your subscription for the time that they require access? Or is there an actual temporary user type that has Read only access

Yes, they count towards the licences because they are logins.
There's no such thing as a temporary user. You're either a user or you aren't.
