I would like to set up a Confluence space for my partners to access policies, procedures, standards, and other knowledge base items. The space needs to be invite only, but since I may have folks from competing firms accessing the space, I really don't want the users to be able to see each other. I want it secure, as in only the people I invite can read the content, but it must be opaque. Of course, I want my team to be able to see who is in there. Is this possible? Probably a no-brainer, but I am in the early phases of trying the product.

I don't think what you want is explicitly possible. There is not a "browse users" permission in Confluence like JIRA has.
But if you don't allow the users to leave comments, or create pages, (use and view only) then their names should not show up anywhere ..
