Our org admin has left the team and we need to change it to somebody else. Any recommendation how this is possible?

If the organizational admin can no longer be reached and your network protocols did not provide for these circumstances. If you have admin rights you can try resetting his password to something you created and try logging in as him provided this user's email was used as the system admin email.
Otherwise you will have to have Atlassian go in and reset the api settings to an email you coordinate with them.
