How to remove an option from a dropdown list in a Confiform when certain number is reached?

I'm using a ConfiForm as a booking system - so I have a list of timeslots available for people to book in a dropdown list. Is there a way for options to be removed from the list when the maximum number of bookings are reached?

I've set up a rule to not allow new bookings using a _COUNT condition, but can I actually hide the option from the list?

Small example on how this can be achieved (I dont know the structure you have, but demonstrating a concept of filtering out options based on the stored data)
