How can the whole of the Confluence Wiki be exported?

To be accessed later as HTML and/or import into Sharepoint.

Dear Steve,

You should open space settings -> Manage space -> Export space [Unfortunately one by one]

Then there you are having few options.

You are probably interested to HTML export.

You'll need to do a space export to html, one space at a time.

Personally, I wouldn't bother, no-one uses Sharepoint to read anything nowadays, it's where documentation goes to die.  If you actually want people to read it, it's cheaper, easier and faster to leave it in Confluence, read-only and anonymously accessible so you don't have to pay anything for your users.
