I have deleted a user from Jira and Confluence but the user history is still existing. Someone please suggest me how to delete user history in the following contexts
In Jira: Comments, issues created or updated, status change and so on.
In Confluence : Space creation, Page updated, Comments and files.
Atleast is there any possibility to replace the user with any other user in user history

I think you just need to wait the 14 days and it will change to former user.
Per the documentation:
Content you created in Atlassian account services. For example, pages, issues, and comments you created in products. For full lists of content that’s not deleted in these products, see the documentation on account deletion in Confluence Cloud and Jira Cloud
During the grace period when the account is deactivated, other users will still see your name in product (e.g., next to your avatar) along with a Deactivated lozenge.
When your account is permanently deleted, Former user will appear in place of your name and the lozenge updates to Deleted.
