I have disabled all email toggles in my Confluence settings.
But I still get E-Mail notifications when someone makes edits to a document.
What do I have to change to completely disable E-Mail notifications?

You can't disable all notification email per user basis. Using preferences, you can customize just some type of notification but you wil continue to receive notification for edit, mention, comment and so on.

I would like to get these types of notifications only via Slack. And don't get any E-Mails at all.
Is there already a feature request for that? To disable all E-Mail notifications in the settings? If not, can we open one?

Yeah, I am watching some spaces/pages.

If you still want the Slack notifications I don't think there is a solution in Confluence.
You could of course just create a filter in your email client and filter out all Confluence emails directly to your archive/trash. That would give you the same result.

Yeah, I was thinking about that, to just set the Confluence sender E-Mail address as spam.
But that would be a hacky way. I would prefer to have a clean solution.
