We have a Confluence page that we use for collaborative work. We have documents (Word and Excel) on our page that various team members can access, edit, and upload. We can use the drop down list at the top to see the different versions but would like to see who made the changes in each version.

Is there a specific reason you are working on the attached files, and not directly on Confluence pages?
Confluence natively tracks who makes which changes, and you can even compare two versions to see the differences.
If you need Word and Excel files as a final product, you can export your pages and/or use an app to embed a spreadsheet on your page.
