How can I get permission to add or delete information/pages if the original creator is no longer with the organization?

Hi @Albert Guite , and welcome to the community! 

There are multiple ways how you can approach this.

If a page is restricted using page restrictions:

A space administrator can remove the restrictions in the Space Settings. The page is listed in the report about restricted pages in the space.

You don't have sufficient space permissions:

You need to find a space administrator who can edit the space permission so you can add/delete content in that space. If there's no space administrator available, a product administrator can modify and reset the space permissions from the Confluence Administration. There's a page called "Space Permissions" listing all spaces and the default permissions. I hope that helps :)
