I'm able to add a column after the current column in the "new editing experience" but I can't find either a way to insert a new column before the first column nor it seems to be documented.
Any advice appreciated.

If you hover your mouse in the area above the column header of the first column, you should see a plus sign appear above the left edge of the column. Click that plus sign to insert a column.

In fact the page in question seems to be broken in some way because the first '+' symbol does not appear while hovering the area numbered 2 in your picture.
Just to test it out I've created a new table and it works as suggested. Because I've originally copied the page which has been created with the former editor I suggest that during the migration to the new editor sth went wrong.

Hm, in the 4 years since I posted the answer, the UI has evolved. Who would have thought that might happen.
In the current UI you can click on a row or column and see a "button" appear near the edge (1). If you hover you pointer over it, it changes to look like (2).
If you then click on it, you get a context menu with the options to add a row or column.
The + buttons still exist between columns and rows, and to add a column on the left or a row at the bottom.

Indeed clicking the move column button opens a menu with this a lot of other options, including the one requested by OP. But why this doesn't happen when we click the arrow button on the right side of the cell? It's the same for rows. The actual menu button only allows for rows under the current cell and you have to click the left-most move button for this.
In my opinion, it's not clear that the move button has another context menu. The grab style cursor does not indicate this.
