I find myself as a user often just typing a search query into the top right corner search and then hovering to see the results and clicking through without ever clicking "search" or "AskAI" and then clicking thru on results that auto-populate.
I imagine my users are doing similar behavior. Do these "type, hover and click on autopopulate" searches get counted as "Searches" in Confluence Analytics?
Are AskAI searches being counted as regular searches?
Question 2:
Are there methods under development for being able to to track AskAI usage vs regular search? I am interested in how much my users are leveraging this feature.

I can only answer your first question. Yes, the search terms are listed in the Confluence Analytics searches. Depending on the user's speed, you will even see partial search terms listed.
I am also curious to hear from Atlassian whether it will be possible to differentiate between traditional and AI searches in the future.

My guess is a low priority. For Atlassian it is a way to show greater use of Confluence.
But to @callie_miaoulis point as a decision maker I want to understand the depth of usage. A parallel is website pageviews, a SEO person is happy to highlight the quantity of traffic but in the end what matters is traffic that converts.
The open question is now much AI searches will be used. We used to hear a lot of people talking to their phones 'ok Google do x and y', not so much now.
