Hello, Our goal is to create an outlook 365 calendar item from data in a confluence page. We want to document and plan IT maintenance tasks and therefore we would like to use an confluence page. That page has info like description, start and end date, risks, rollback scenarios, etc. In addition an O365 calendar item should be created making use of the data in the page. Can this be done in Confluence?

Yes, I agree this is possible. If you want to go a little further, you can avoid managing events in multiple places by working with real-time data from Microsoft 365.
With the app Outlook Calendars for Confluence (available for cloud, server & DC) you can create new project meetings directly in Confluence and an Outlook meeting request will be sent automatically. Simply said, your calendars in Outlook and Confluence show the same.
