When you click on “edit” on a page, all content starts to twitch and doesn’t allow editing. Pictures expand and shrink, the cursor automatically jumps and changes in the text message freeze. Apparently, this only happens when the page contains many different blocks and other content such as tables and photos.

When this happens, did you try changing your browser width (smaller or broader, depending on your available screen width) to see if this stops the mentioned behavior?
I think the problem is caused by the page content resizing to your available browser width.

Yes, I tried using a different browser width - nothing works, same behaviour for smaller widths or default desktop available screen size, even on different devices with screen resolutions etc.

Thank you for your feedback. Since it seems to affect several Confluence instances and is not a resizing problem of the browser, I recommend contacting the Atlassian support directly. They should be able to assess better what is causing these issues in your Confluence.
