I do not see the option to insert the numbering column.
Documentation states that this was introduced with 5.8.
Is there anything that needs to be enabled for this to work out of the box?
We are running 6.8.0 Starter License self-hosted.

It does exist in the Cloud version but not very well easy to find,
You click anywhere in the table so that the macro options appear (at the bottom of your screen).
Then click on "Table Options" and "Numbered Column" will appear in the drop down.

This has changed again location ! It is burried deep in some settings now. Really counter intuitive design :(

In Confluence 6, rather than having a catchall "Settings" button for your table, more of of those options are directly exposed. For instance, the "Insert numbering option" option is now a dedicated button that appears in the second row of editor icons.
In your screenshot I can actually see this option in use, and the button to enable it is highlighted. Is this screenshot taken from your own instance, or are you not seeing that button?
