Hi All, we currently have an on-premise instance of Confluence - which we run with a Confluence (Data Center) license.
Does this mean that we are definitively on a Data Center instance. We have never set up multiple nodes or clustering - however we do have the clustering and 'enable cluster mode' available.
Just checking we are okay regarding eol of server on 15th February.

You can see this in the licence screen or the system information page. Both will tell you about the licence, but the fact you have clustering and "enable cluster mode" is actually enough already. You would not see them if it were a server licence.
The server doesn't really care how many nodes there are in the cluster, it's absolutely fine if it is a "single node cluster", but it will still give you the options you are seeing.
I am 99.9% certain you have a DC licence on this machine, but even if you do not, Server licences are perpetual - everything will continue to work, the only change you will see is that your admins will get a lot of boxes with "hey, you're on an old server licence, so you are not supported" in them. Your non-admins won't notice a thing!
