We are currently using the OnDemand product and would like to delete a project while preserving it's wiki (as a global space).
Alternatively, is there a way to convert a the Project Wiki to a Global Space Wiki (or are they the same). After converting or migrating the Project Wiki to a Global Space, the intent would be to delete the (empty) project, since we are currently only using the wiki on that project.

We usually do not advise to delete projects, you might need them in the future. Instead we advise to hide it.
To achieve this you need to create a blank permission scheme and associate the respective project with it.This way no one has permissions and therefore cannot see it.
You will find a description on our http://confluence.atlassian.com/display/JIRA/Archiving+a+Project. There you will find information on how to "un-hide" it in the future.
