In setting up a "send email when" automation, my only options seem to be to send it to Confluence groups. I'd like to have it go to just one person. How can I enter a single email in the "to" line? It says "type to add email addresses, user/group fields or smart values," but if I I type in a single email, it does not save.

As @BHANU TEJA showed, this is possible. I ran afoul of this often when this feature was first introduced. Just typing the email address is not enough; you need to select the email address object the UI presents in order for it to be saved:
