Apptoval for confluence provides the possiblity to expire page or section approval atba pre-defined date. My question if this functionality can be leveraged to expire an approval request sent to someone in way that if no response is received (approved or rejected) the page owner or the person requesting the approval would receive an email alerting him/her that no response has been received.

You haven't precisely written which approval app you are using here?
There is Approvals for Confluence, there is Page Approval for Confluence, there is Approval Path for Confluence, but it is not clear which one you're using.
But, generally speaking, you can implement custom reminder emails with the Better Content Archiving app. It can send a list of pages to approve to the approver user(s) using a custom schedule and custom email subject and body.
