If your team wants to get the latest features as they come out, we always recommend moving up to the latest version where feasible.
Otherwise, if the upgrade process for your team is too strenuous to allow continual upgrades, the listed Enterprise release (the latest iteration of 6.10 at time of writing) for Bitbucket Server will continue to get security updates/critical bug fixes throughout the tenure of its 2 years in which it is supported.
