Thanks for mentioning ScriptRunner for Bitbucket Server Ulrich. You can add default reviewers and mandatory reviewers (both users and groups) on a pull request using the auto add approvers event handler. This can also be based on a particular condition. For example you may only want to add these reviewers if particular files are changed in the pull request or if a particular user created a pull request.
All is explained in that link to our documentation.
Mandatory reviewers are something Bitbucket Server does not provide out of the box but are useful if you want to enforce certain reviewers that can not be removed by the user. For example adding a senior developer as the reviewer.
This can be configured in both the repository settings or in the admin section for multiple repositories/projects.
You can find it under Repository Settings -> Script Event Handlers -> "Auto add approvers" or Admin -> ScriptRunner -> Script Event Handlers -> "Auto add approvers"

you may choose to use a Bitbucket (Server) Add-on that does that for you. I know of 2 add-ons that can add normal and mandatory reviewer groups
