How do I use plan variables in my Xcode tasks to change the Apple SDK?

For some reason Bamboo doesn't allow using a plan variable for the sdk version in our  Xcode tasks. This is a variable that I have successfully used elsewhere in our Bamboo scripts. The variable I'm trying to use is ${bamboo.ios_sdk_version} which is set to "Simulator - iOS 12.1". Please see screenshot below.
