Is there any way to find out how much users is using what version of the Bamboo plugin, or general usage statistics?

As the vendor of any app published via the Atlassian Marketplace (formerly known as addon, formerly known as  plugin), you can "Get a specific app’s active installation counts over time, aggregated by app version" from the app's listing page and via the Marketplace API:

Please note that this is only an approximation, because not all active installations do report the usage data back to Atlassian due to firewall and/or privacy restrictions.

Hmm.. Cannot think about any good direct user activity statistics in Bamboo.. Maybe this could be helpful https://confluence.atlassian.com/bamboo/viewing-build-statistics-for-all-users-289276966.html.
