I am in Australia and would like to do intermediate - advanced training to use Structure. Can anyone recommend anything?

To learn more about specific features and functionalities, you can refer to their Documentation.

Structure Bootcamp playlist on YouTube will also help you learn the fundamentals of Structure as well as key use cases, including creating multi-project overviews, doing sprint planning, forming Agile hierarchies, and more!
