Target start end dates not matching to Sprint Dates

Hello! I have an Advanced Roadmap plan configured to use Target start/end dates from sprint dates. 

Sprint dates

Use sprint dates when issues don't have start and end dates

However the target dates don't totally line up with the actual sprint date

Start dates are the same but end dates are a day before. See screenshots

interesting.. thanks! I will take a look at your accepted answer! I already gave the incorrect completion date once today bc of this.
