Is there a way I could defined a desired due date and the actual due date and show both these on the advanced roadmap view in the right side gantt chart ?

Not exactly.

Yu could have both those date fields as the plans designated date fields, presumably desired is always before actual? (though the other way around would be the better problem to have)
Then put desired in as the start date and Actual as the end date. that would show the deltas on the gantt view.

Otherwise, using one of them as the designated End date (of the plan) and have the other one showing as a field/column in the view is all you can do within one Plan.

It isn't a bad idea, if I were you, I'd push the "Give feedback" button (top right) and suggest it as a possible feature for the future.
